Mushroom Risotto

This recipe came out really well. It was really tolerant of my approximations.

I omitted the onion - it was moldy inside! I used one box of baby bellas and a small bag of dried shiitake. Probably less the the recipe called for, but it worked out fine. I hydrated the shiitake in water instead of broth, so I only used 7 cups. I didn't use any truffle oil or salt. I could have used some pepper though.

I made lemonade with lemons from work and some from our back yard with the following recipe. It might have been a little too sweet.

  1. I think this was one of the best dishes yet! The mushrooms were really good in this dish. Risotto is such a comfort food. I'd have to agree with Phil that the lemonade was a bit on the sweet side. However, it went well with carbonated water to make a lemonade spritzer.
