Fire Roasted Tomato Pasta with Chickpeas and no Arugula

This recipe from WebMD turned out really good.

Fire Roasted Tomato Pasta with Chickpeas and Arugula

Although there was a fair amount of prep, it was pretty easy. I used rotini pasta, and I left out the arugula, since it's out of season. I think arugula would make a pretty good addition to the dish, so I need to remember to plant some in our garden.

Bread Pudding

Using Andrea's mom's recipe, I cut up a 1/2 loaf of french bread and it was quickly apparent that there was much more bread than milk. Andrea had me double the recipe (except we only had 7 eggs and needed 8). Usually the ingredients are mixed by the time the oven is pre-heated, but I was a little slow. The ingredients went into the aluminum pan, sprayed with Pam (tm), instead of butter (no tm). Cooking took about 65 minutes rather than 40 because I think there was a little more liquid than there should have been.

Thai Curry

This came out really well. It required a fair amount of ingredient prep, but it was well worth it. I used two tablespoons of red curry paste, but I could have handled three.

This was served over linguini.

French Toast

This was easy for a Sunday morning breadfast. It's a good opportunity to use the left-over french bread from last night's spaghetti dinner.

I made the french toast with soy mild rather than cow's milk (being lactose intollerant, you know). The soy milk may have been the reason that the cinnamon didn't want to "wet". It just floated like a slick on top of the mixture.

Mushroom Risotto

This recipe came out really well. It was really tolerant of my approximations.

I omitted the onion - it was moldy inside! I used one box of baby bellas and a small bag of dried shiitake. Probably less the the recipe called for, but it worked out fine. I hydrated the shiitake in water instead of broth, so I only used 7 cups. I didn't use any truffle oil or salt. I could have used some pepper though.

I made lemonade with lemons from work and some from our back yard with the following recipe. It might have been a little too sweet.

Expanding Horizons

I'm going to do more than just Sunset from here on out, however, I'll try to keep the same healthy and delicious style.

This is a pretty quick and easy peanut spaghetti recipe.

It calls for slightly less noodles than come in a package (I cooked the whole package), so I added some extra sesame oil and peanuts. I should have added more of the other ingredients too. The sauce was rather thinly spread over the noodles. We had a my special Caesar salad with kalmata olives, and anchovies.
